Ingredients:
Carne Asada:
- 2 lbs beef, skirt
- 1 lemon, juiced
- 1 onion small
- Salt
- Pepper
Pico De Gallo:
- 1 jalapeno pepper, small
- 2 Tomatoes
- ½ onions, white or 1/2 red onion
- ¼ lime, juiced
- ½ lemon, juiced
- ⅓ salt
- ¼ pepper
- ¼ cup cilantro, fresh
- ¼ garlic powder
- 1 pinch of chili powder
- 1 pinch cumin
- 1 pinch of oregano, dry
Guacamole:
- ¼ cup pico de gallo
- 2 avocados, large
- 1 dash of hot sauce
- ¼ lime, juiced
- ½ lemon, juiced
- ½ teaspoon salt
- ¼ teaspoon pepper
For Carne Asada Burritos:

Directions:
Meat:
- Spread out the meat and liberally season it with salt and pepper.
- Cut the meat into 1/4-inch cubes. Put the meat in a resealable plastic bag and add the onion and lemon/lime liquids.
- Refrigerate for at least 30 minutes and up to 24 hours.
Pico De Gallo:
- Finely dice all ingredients and combine thoroughly. Refrigerate while covered; stir occasionally.
Guacamole:
- Put avocado meat in a bowl and thoroughly mash with a fork; add the remaining ingredients and season to taste.
- Refrigerate the guacamole after covering it with plastic wrap and pushing it down to remove the air.

- One at a time, warm the tortillas in the microwave under a damp paper towel. (approximately 20-30 sec.)
- Alternatively, wrap tortillas in aluminum foil and bake at 350 degrees for 10 to 15 minutes. They should be warm and malleable for wrapping.
- Add one teaspoon of oil to a medium-sized pan heated over high heat. When the oil begins to smoke, add between a quarter and a third-pound of carne asada and onions.
- Sear the meat until both sides are brown. The meat and onions should be placed in the center of a warm tortilla.
- Add pico de gallo, guacamole, and, if preferred, french fries and/or cheeses, then fold the edges in to form a burrito. Serve warm.
